    1. Regarding hypothyroidism: Before I ever ate raw greens, I developed hypothyroidism which runs in my family. So I began taking thyroid medication and my T 1 and 2 levels normalized. At that time I started eating a lot of raw cruciferous veggies. I had my thyroid levels monitored and they didn’t change.
    2. The reason I recommend raw crucifers is for their anti cancer benefits. You only get the I3C (Indole-3-carbinol ) necessary for breast and ovarian cancer prevention when eating these veggies raw. In fact there are several veggies that need to be eaten raw for anti cancer benefits – that includes garlic and onions as well. However, veggies that contain lycopene as in tomatoes should be cooked with a little fat to make their nutrients more bioavailable.

    Thus, it all depends on what you want to absorb from veggies and what your risks are. And the crucifers have not increased my thyroid levels so I eat them raw for their anticancer benefits.
