Electric Cookers Less Harmful Than Gas Ones

Meat fried on a gas cooker contains more carcinogens than cooked in an electric stove, scientists from the Norwegian University of Science and Technology say.

In the course of experiment, scientists, reproduced conditions of a typical European restaurant; steaks of red meat were fried on fire and electricity for 15 minutes. Most toxic substances, including the potentially carcinogenic mutagenic aldehyde, were found in meat fried on gas. Scientists suggest that the reason is in heating level: in gas cookers, it is higher. In addition, the gas itself contains harmful substances that get into the food while cooking. So if your kitchen is equipped with a gas cooker, take care of a good kitchen extractor fan, Deborah Jarvis from the National Heart and Lung Institute advises.
